A Tale of Customer Satisfaction

Dear Brian and Mickey,

I wanted to write and tell you how much we've enjoyed working with your company for my son's graduation party.  Both times that you've catered our children's parties, we've been completely satisfied and happy.  I’m sorry that I never wrote to you last year after my daughter's high school graduation party, but we were very happy with everything; food, service, the professionalism and the helpfulness of Jim and Jamie.

 First off, let me say that last year and this, working with you all through email and on the phone has been a pleasant and professional experience.  I appreciate that I could basically make up my own menu and you guys would do it for me without any hesitation.  Also, the fact that there were no hidden charges or extra fees and basically everything that you expect a caterer to do and need to prepare a meal is included in the one price.

Last year we had the fried chicken and mac & cheese and it was the best fried chicken and mac& cheese that we've ever had.  Everybody who ate it agreed and our guests couldn't believe that it was being fried fresh on the spot.  And we had enough leftovers to feed our family and my sons' friends for a week!  As soon as we said we were having the same caterers, they wanted to know if we were having the fried chicken again.

The food, again this year, was phenomenal. I have, honestly, received so many compliments on the food. To start, the clam chowder was outstanding, that is one of my son's favorite foods and I am so happy I decided to have you do it (next time, we'll do the clam cakes, too). Everybody was commenting on how delicious it was.  The BBQ chicken was tasty and moist, and still was after numerous re-heatings.  The steak tips were the hit of the party.  I don't know how Jim managed to cook them to perfection, that even after re-heating them at home, they were still rare and juicy.  We have literally been eating the leftovers for a week (you saved me a lot of cooking this week).  The only thing that didn’t last the night was the corn bread because my son and his friends finished that off at 3am that morning.

Last year, when I hired you for my daughter’s party, I obviously didn’t know what to expect, but this year, I was so confident that we were going to have the best food and the best service.  I have worked with other caterers before and things like being courteous and professional (and being on time) are not always a given.  That’s why I cannot say enough nice things about Jim and Jamie.  I literally didn’t have to worry about a thing.  I could enjoy my own party without having to micro-manage every little thing, because I know those two guys are handling it.  I’m still in aw in how they can set up a portable kitchen in a parking lot and produce the amazing food that they do, while also waiting on us on the inside.  They both go above and beyond; from icing down our beverages to carrying the cake upstairs and cutting it, to helping me carry food outside to some guests.  My family couldn’t believe what a great job they do cleaning up after themselves and the way the leftover food is packed up for me to take home.  And I really appreciate the way they go around cleaning the tables during the party so by the end of the night there is minimal clean-up for us to do.

The woman who manages the club where we’ve had both parties told me that she’s never seen a caterer clean up the way your guys do.

Mickey, I just found out this year that Jamie is your son and I have to say you should be very proud of him.  He’s a super guy.  You don’t find many kids his age that work as hard as I’ve seen him work (in the blazing hot sun) and be polite and pleasant while doing it, all the while being completely professional.  He is a great representative of your company and family.

Jim, too, has been a real pleasure to work with.  And again, I’m amazed at the food he can conjure up in a parking lot!  Everything I asked them to do, it was done with a smile.  Ask them about the ‘cupcake fiasco’ from my daughter’s party (LOL).

Well, I guess you can tell by now that I love your catering company and hope we can work together again in the future, when we can get to eat more of your amazing food.  I hope Jim and Jamie will still be working.

Tim Walker's Horseradish Cream Sauce

Our fans are always asking for B&M Catering’s front-man, Tim Walker, to share more of his favorite recipes.  In the past, Tim has let us publish his recipes for Basil Lemonade, Watermelon Salad, Quinoa Salad and other delicious foods.  

Last month, Tim whipped up a batch of his signature Horseradish Cream Sauce to accompany the beef tenderloin that was to be served at a beachside wedding. Many guests at the wedding loved the sauce so much, they begged for us to share the recipe. Tim loves to please our customers, so he agreed to share his recipe:

Tim Walker’s Horseradish Cream Sauce

1 cup sour cream

1/3 cup prepared horseradish (not horseradish sauce)

2 teaspoons Dijon mustard

1 tablespoon finely minced shallot

1 tablespoon finely minced fresh chives

1 teaspoon lemon juice

Heavy cream as needed

Salt and pepper to taste

Serve alongside roast beef, steak or filet.

Other uses for Horseradish Cream Sauce:

Mix it with mayonnaise to use on burgers with roasted red peppers. 

Add it to mashed potatoes for a nice zing.

Use it to bring out more flavor in your homemade macaroni and cheese.

You can use it as a base to coat chicken or fish before you bread & fry it, instead of eggs.

Use it as a sandwich spread.
