With Spring officially sprung, it’s time to start thinking about all things green, and that includes spinach!
On March 26th each year, this leafy green veggie is celebrated with National Spinach Day.
Packed with health benefits, spinach is an excellent source of iron, calcium, folic acid, fiber, protein, calcium, and vitamins A, C, and K. It is loaded with cancer-fighting antioxidants and is believed to help improve cardiovascular and gastrointestinal health too!
Talk about healthy; no wonder spinach is honored with its very own day!
The history of this healthy veggie is impressive. Spinach grows natively in central and southwestern Asia. It is thought to have originated in ancient Persia, where it was then carried into India and then later introduced into ancient China. There it was known as “Persian vegetable.”
Spinach even has royalty in its backstory. During her reign as queen of France, Catherine de Medici enjoyed spinach so much; it was served at every meal. To this day, dishes made with spinach are known as “Florentine,” reflecting Catherine’s birth in Florence.
