Pizza Soup

Recently, on a cold, New England afternoon, we were sitting in our conference room reviewing our menus and events when Tim mentioned he would just love a big bowl of steaming soup.  Mick, Brian and Bob all agreed that soup would be just the right food for just that moment.  Of course, we could have headed out to our commissary for our traditional clam chowdah. (How do YOU say it?), or Tim's special vegetable stew.  But then we thought we might like to find out what our fans are cooking up for soup these days. So, we put out a request on our Facebook page and on Twitter asking folks to share their favorite soup recipes.

We are very grateful to everyone who sent along their family recipes.   Here is one we would like to share with you today.

"Oh, do I have a soup for you!

Please keep in mind that I come from a large family and exact measurements are pretty much up to the individual's tastes.

We call this recipe.... PIZZA SOUP"

Ingredients:
  • 5 lbs.* Beef stewing meat
  • 3 TBS Butter
  • 2 lbs.* Onions (yellow not sweet)
  • 3 lg cans of Whole Tomatoes (nothing with seasonings and if you prefer to use diced or crushed that is fine, too)
  • 1-2 cups of Water (optional - you may NOT require)
  • 1 pint of Heavy All-Purpose cream OR Half-and-Half (plain, no flavor)
  • 4-5 cups of Shredded Mozzarella Cheese

Method:

* Braise beef in butter in large stock pot

* Add onions and sauté until tender

* Add the tomatoes

* Allow this mixture to simmer for 2-3 hours (the longer the better as the stew meat will get tender)

* Stir occasionally - add 1-2 cups of water IF THICK

* Slowly add cream (to desired coloring - not too light as it will affect the taste of the soup)

* Allow the soup to warm up again - 3-7 minutes

Add the mozzarella cheese to each bowl before serving.  

Note:  Cheese can be added directly to the pot, but tends to clump up. This way you assure each person has the "cheese".

Spice Up Your Valentine's Day

According to a recent survey by Harris Interactive, men and women believe that a lobster dinner is the most romantic meal of all time!

The survey showed that most adults believe a lobster dinner is the number one most romantic meal. Nearly four out of 10 men (36 percent) and women (37 percent) think that it would be most romantic to get engaged over a lobster dinner, compared to about a quarter of men (25 percent) and women (22 percent) who think steak would set the most romantic tone. 

Men and women may disagree on many topics, but on this, they agree. They also believe that Valentine’s Day is the most romantic occasion for a marriage proposal. Over half of those surveyed answered that this is absolutely the most romantic occasion to propose marriage. And, get this, more men than women thought this was true.  Men (58%) are more likely than women (49%) to think that Valentine’s Day is the most romantic day to ask “Will you marry me?”

So, we wouldn’t tell you what to do – but, it would seem the numbers speak for themselves.

The Fresh Lobster Visits the Boston Celtics!

As far as we know, this was The Fresh Lobster's first visit to the Boston TD Banknorth Garden where he got to watch the Boston Celtics play the Phoenix Suns.

The Fresh Lobster was welcomed throughout the entire visit from the entrance at North Station, to the Beer Garden, the concession stands and especially in the souvenir shops.

Ralph, the usher, told us he would love to pose for a picture with The Fresh Lobster - but what he was really hoping for was a fresh New England clambake from B&M Catering !

Andy and Jay were visiting from Montreal.  For his birthday, Jay had received tickets to see Rajon Rondo and the Boston Celtics play at the Garden.  He and Andy took a bus down and had just finished a day of touring Boston on the Duck Tours before heading over to watch the game.

The Celtics beat the Suns that night.  But more importantly, The Fresh Lobster got to get close up and personal with Celtics heroes, Kevin Garnett and Paul Pierce.
