Karen Emery's Low-Fat 'Fried' Eggplant

Oven Fried Eggplant
Ingredients
1/2 cup fat-free mayonnaise 
1 tablespoon minced onions 
1 lb unpeeled eggplants, sliced (about 12 1/2 inch slices) 
1/3 cup fine dry breadcrumbs 
1/3 cup grated parmesan cheese 
1/2 teaspoon dried Italian seasoning 
vegetable cooking spray 

Combine first 2 ingredients, stir well. 
Spread evenly over both sides of eggplant slices. 
Combine breadcrumbs, cheese, & Italian seasoning in shallow bowl
Dredge eggplant in breadcrumbs mixture. 
Place eggplant on a baking sheet coated with cooking spray. 
Bake@ 425 degrees for 12 minutes. 
Turn eggplant over; and bake an additional 12 minutes or until golden.

Fun Fundraising with B & M Catering

B&M Catering has been helping schools, teams, fraternal organizations and other nonprofits raise money for many years by putting on Pig Roasts, BBQs, Clambakes, and other fun, cost effective events.  We have helped organizations from Boston to Worcester to Hartford to Newport with events such as athletic banquets and award dinners, senior week events, alumni groups and field days.

Hawaiian Luaus, Corned Beef and Cabbage Dinners, Medieval Banquets, Mexican Fiestas are just a few of the number of possible themed events we can provide for your organization.  

How does it work?  

You and your members simply sell tickets, that we provide, and B&M Catering will coordinate the rest.

We will supply the food (you choose the menu), the cooking and serving equipment and supplies, as well as the the labor to cook and to help coordinate your volunteers.   You tell us where to show up and lend us a few volunteers to help serve the hungry guests.

The Fresh Lobster Visits Sydney, Australia

 The Fresh Lobster gets to travel pretty much all over the world, from Boston to Australia and back

In the background, as if you didn't know, is the Sydney Opera House. What a place.  What a palace.  It was designed by Danish architect Jorn Utzon and was opened by Queen Elizabeth II in 1973. It contains 1000 rooms and is toured annually by 200,00 people. Make that 200,000 people and 1 Lobster.

She is the winner of this month's Clambake to Travel give-away.
