Chef Laura MacDougall's Mix and Match Un-Salad

Chef Laura MacDougall of Home Plate Advantage shares a hearty salad recipe.

 serves 4 as a side, 2 as a main course 

Chef Laura's Summer Salad

Mix in a large bowl: 

1 cup of your favorite cooked grain (wheatberries, barley or spelt)

1/2 cup chickpeas, drained and rinsed 

2 cups steamed kale, chopped

1/4 raisins, dried cranberries or chopped apricots

1/4 toasted walnuts, roughly chopped or use sunflower seeds, pumpkin seeds or other favorite nut


Whisk together:

2 Tbl olive oil

4 Tbl apple cider vinegar

1 teaspoon honey

2 Tbl apple juice

1/2 teaspoon Dijon mustard (optional)

Toss dressing with salad, let rest 15-20 mins to develop flavors and enjoy. Feel free to mix and match ingredients, add steamed veggies, use other beans, or use wild rice or quinoa (double quantity due to it's small size). Make more dressing if you like a wetter salad. 

Toss in some blues cheese for a kick or add grilled chicken for a heartier meal. This is your salad - play, experiment and enjoy!

Where is the The Fresh Lobster now?

Recently,  B&M Catering customer, Barbara Gauthier, from Taunton, MA, was kind enough to send us this photo of The Fresh Lobster in his travels.   This time, TFL was in Burlington, VT at the USA Championship Triathlon ! 


The website for USA Championship Triathlon  tells us that founded in 1982, USA Triathlon is the National Governing Body for triathlon - one of the fastest growing sports in the world.  USA Triathlon sanctions 3,500 races and connects with more than 135,000 members each year, making it the largest multisport organization in the world.  In addition to its work with athletes, coaches, and race directors on the grassroots level, USA Triathlon provides leadership and support to elite athletes competing at many international events. Their mission is to encourage, support and enhance the multisport experience in the United States.

Catering at Arrowhead Acres

Recently, we had the pleasure of catering a wedding at beautiful Arrowhead Acres in Uxbridge, MA.

     Arrowhead Acres is an elegant, yet casual, 49-acre estate just 20 minutes from Providence & Worcester and 55 minutes from Boston.

They even have a chapel in the pines which is a great spot for outdoor weddings.

The banquet hall is the perfect place for indoor weddings, receptions, anniversary parties,corporate events, and family picnics,.  They have a country fun area with a swimming pool that is great for clambakes, barbecues, bbqs, and campfires.

Jasper's Frozen Dog Treats

In Celebration of National Dog Day - August 26
Is there anything better on these steamy-hot dog-days of summer
than an ice-cold drink or frozen popsicle?
The cold sensation is refreshing.
Your dog will think so too.

 Frozen Pupsicles:
                 For a special treat your dog will really love, make a dog-friendly Popsicle.
Here are the supplies you will need: 
    - Popsicle mold , ice cube tray, or small paper cups
    - 6 jerky pet treats or dog treat biscuits
    - Blender
Here are some suggested ingredients (*)
     -2 cups chicken broth
    - 1/2 cup unsweetened apple sauce
     -1 jar chicken and rice baby food (or flavor of your choice)
     -1/2 cup chopped fresh mint
Here's what to do.
     - Blend ingredients in a blender or food processor until combined.
     - Pour into an ice cube tray or mold and stick a jerky stick in each.
     - Freeze until solid, and then serve as needed.

(*)You can use your own discretion for what ingredients to add.  
This recipe adds the mint leaves to help freshen Jasper's breath.
