A Taste of Medieval banquet Dining

The Middle Ages were a time of grandeur and excess, especially when it came to dining. Inspired by the Crusades, medieval society developed a fascination with exotic goods and lavish feasts. In the Banquet Hall, the King and Queen would host guests, seated in order of importance, at the Great Table.


Before the meal, servants would present bowls of water for guests to wash their hands. Forks weren’t used—diners relied on their fingers, spoons, and bread for eating. And where did scraps go? Simply tossed onto the floor!


Feasts often included three to six courses of extravagant dishes. Alongside familiar foods like bread, pies, and roasted meats, guests might encounter exotic fare such as peacock, porpoise, or seal. Dishes were colored with natural dyes: sandalwood for fiery red, saffron for vibrant yellow, and boiled blood for a striking black hue.


The highlight of these feasts? "Sotiltees" (or subtleties)—intricate sugar sculptures shaped like ships, castles, and famous figures. Entertainment filled the gaps between courses, with musicians, jesters, acrobats, and minstrels keeping the festivities lively.
